Ingredients
- 1½ cup White or brown rice, uncooked
- 2 can Canned black beans, drained
- 1 can Canned corn, drained
- ½ cup Salsa
- 1 tsp Ground cumin
- ½ cup Shredded cheese (optional)
- 1 each Lime or lime juice (optional)
Instructions
- Cook rice according to package instructions.
- In a saucepan, warm the black beans, corn, salsa, and cumin together over medium heat, 5-7 minutes.
- Spoon the bean mixture over rice.
- Top with cheese and a squeeze of lime if using.
