Ingredients
- 2 cup Dried lentils, rinsed
- 2 each Carrots, diced
- 2 each Celery, diced
- 1 each Onion, diced
- 1 can Canned diced tomatoes
- 6 cup Vegetable or chicken broth
- 2 clove Garlic, minced (or 1 tsp garlic powder)
- 1 tbsp Cooking oil
- 1 tsp Salt and pepper
Instructions
- Heat oil in a large pot over medium heat. Cook onion, carrots, and celery 5-6 minutes until softened.
- Add garlic and cook 30 seconds until fragrant.
- Add lentils, tomatoes, and broth. Bring to a boil.
- Reduce heat and simmer, partially covered, 25-30 minutes until lentils are tender.
- Season with salt and pepper to taste. Freezes well for up to 3 months.
