Ingredients
- 4 each Russet potatoes, medium
- 1 can Canned chili or black beans
- 1 cup Shredded cheese
- ½ cup Sour cream or plain yogurt
- 2 cup Frozen broccoli (optional)
- 2 tbsp Butter or oil
- 1 tsp Salt and pepper
Instructions
- Preheat oven to 425°F. Wash potatoes, poke a few holes with a fork, and rub with a little oil and salt.
- Bake 45-55 minutes until a fork slides in easily.
- Meanwhile, warm the chili or beans, and steam the broccoli if using.
- Split potatoes open, fluff the inside with a fork, and top with butter, chili/beans, cheese, broccoli, and sour cream.
